Cask-conditioned beer is an ale that undergoes a secondary fermentation by maturing in small casks (approximately 11 gallons), which gives it more developed flavors than draught beer. It is also smoother than keg beer because it is dispensed without the use of carbon dioxide (CO2). Draught beer is pushed from a keg using CO2, while cask beer is pulled out of the cask and drawn into the glass using a siphon pump device called a beer engine. This is the traditional serving technique found in pubs in the UK.

1347 marks the first year of the historical Black Plague that swept through Europe during the Dark Ages... It is also the name of the first beer brewed at our production facility in Oceanside. Beer to the Rescue is a campaign built around craft beers brewed to raise funds to support Lupus research and awareness via the Lupus Foundation of Southern California.
Lupus is a chronic autoimmune disease that can damage any part of the body. In lupus, something goes wrong with the immune system. As a result, it creates autoantibodies that attack and destroy healthy tissue, rather than just the normal invaders like bacteria and viruses. These autoantibodies cause inflammation, pain, and damage in various parts of the body.
There is currently no cure, but there is treatment. Research is the key to solving this mystery and ending its brutal impact.
Join us in learning more about how to help fuel awareness and raise money to further research, treatment, and hopefully a cure!

Lupus is a chronic autoimmune disease that can damage any part of the body. In lupus, something goes wrong with the immune system. As a result, it creates autoantibodies that attack and destroy healthy tissue, rather than just the normal invaders like bacteria and viruses. These autoantibodies cause inflammation, pain, and damage in various parts of the body.
There is currently no cure, but there is treatment. Research is the key to solving this mystery and ending its brutal impact.

May is CalFresh awareness month, and Benchmark is partnering with San Diego Hunger Coalition (SDCH) to spread the word and support the fight against hunger in our region.
Every Sunday in May we will offer #SundayPints of Table Beer at $4.18, the average daily CalFresh allotment per person in San Diego County. That's right, the cost of a discounted beer is more than some people recieve each day to help put food on their table.

Downtown Brewpubs Monkey Paw, Resident & Half Door Brewing are teaming together to make “11 Barrel IPA”. This solidarity brew was founded on principles in opposition against big beer and their obfuscation in pursuit of outcomes that negatively impact both the local San Diego small beer industry and all the members of the Brewers Association defined as "small and independent American craft brewers".
When a large brewer has a controlling share of a smaller producing brewery, the brewer is, by definition, not craft. We have seen many of our larger and more influential brewing companies and small brewer organizations seemingly become more complicit with the upward battle against these multinational juggernauts. We have witnessed collusion with local media, urban planners, and real estate developers and this in itself shows the sheer power and influence these big beer companies have. Insidious statements from these large, multinational brewers such as "the pub localize the brand” show just how manipulative their tactics are in hopes to regain a stranglehold on our beer industry.
When "crafty" large brewers espouse propaganda that deliberately blurs the lines between small, local and independent beer it is exactly this lack of transparency that doesn’t allow beer drinkers to make an informed choice about who brews and benefits from the beer they are drinking. So this is why it is so imperative we ban together and do a far better job at shining a big bright light on the truth because it’s our industry and our communities who will suffer in the long run when all of our choices become limited as our peers and their small brands are shoved to the back of the box stores while the big beer “sock puppets” move to the forefront.
So 11 Barrel IPA is just one way in which we can try and show solidarity and a common voice in opposition against these ill-intended usurpers. With a much louder unified voice by standing up against the behemoth that stands in direct opposition to our small beer values. Perhaps this can reenergize and motivate small brewers to continue to bang the drum and bring awareness to this potential industry epidemic.
That being said the 11 Barrel IPA series will be a 7% IPA with 60% of the total hop bill deriving from one specific hop. From that point, each brewery will craft the rest of the recipe (water, yeast, adjunct, grain) to their unique styles and vision which are the hallmarks of small indie beer making. We plan to release these 11 Barrel IPA's on May 28th with a solidarity brewpub crawl with portions of the proceeds going to causes that will support the serious homeless crisis we are having in our community.
10 Barrel’s Garret Wales has been very pointed that “(The critics) are a very small but vocal minority” and that is a statement that is hard to accept as real news. So this inaugural batch will kick off May 10th and we are inviting all of our friends and industry members as well as fans of small beer to come down to any of our breweries to take part with us in this solidarity brew. Our doors are wide open for you to come partake with us and we all would love to have you!

PWS was first described by Swiss doctors Andrea Prader, Alexis Labhart, and Heinrich Willi in 1956 based on the clinical characteristics of nine children they examined. The common characteristics defined in the initial report included small hands and feet, abnormal growth and body composition (small stature, very low lean body mass, and early-onset childhood obesity), hypotonia (weak muscles) at birth, insatiable hunger, extreme obesity, and intellectual disability.
PWS results from an abnormality of chromosome 15, and definitive diagnosis is now based on genetic testing.

Council Brewing Company is celebrating our 3rd Anniversary with a huge, outdoor, 50+ beer tap list extravaganza on June 10th, 2017 (VIP Session 11AM - 5PM, General Session 12PM – 5PM). For this special occasion, we are taking over the adjacent parking lot to extend our party outside and enjoy the beautiful San Diego summer weather. Of the 50+ beers, over 30 are barrel aged, foeder aged, and sour beers! In honor of our Anniversary, we will also be debuting our Biere De Miel Third Anniversary Bottle Release at the party. This 11.2% ABV farmhouse, highly carbonated, honey beer is inspired by celebratory Champagne style wines. In keeping with this and to bring out all the complex flavors and effervescence of this rare and special beer, we only packaged this beer in corked and caged bottles - there are no kegs of this beer. We hope you will join us for a special toast with this beer at 1:30pm and take home some bottles to share with friends.

Beer Description: 3rd Anniversary Biere De Miel (11.2% ABV) is a Farmhouse Ale fermented and aged with honey in oak barrels for 18 months and cellared for an additional 9 months. Inspired by the celebratory spirit of special occasions and popping bottles of champagne, this beer is highly carbonated, packaged in champagne bottles, then corked, caged, and wrapped in gold foil.

AleSmith Brewing Company will be hosting a 5.5 kilometer walk/run Father’s Day Weekend to pay tribute to Tony Gwynn - a hall of famer, coach, teammate, and Dad. Nicknamed “Mr. Padre” for his unfaltering commitment to his hometown, Tony is considered one of the best and most consistent hitters in baseball history. The majority of his record breaking hits were targeted to the thin slice of infield between the third baseman and shortstop, which he later dubbed as the “5.5 hole”. Funds raised from this event will forever honor this legend and raise money for the Tony and Alicia Gwynn Foundation.
The 5.5K will be a loop through Miramar (aka Beer-a-mar) starting and ending at AleSmith Brewing with a beer pit-stop along the course at Mikkeller San Diego.

This two-day workshop explores fermentation control points and how to
maintain optimal yeast performance as well as develop desired flavor
compounds. This course will also cover off-flavor detection and sensory
of different yeast strains, as well as troubleshooting problem
fermentations. Two lab sections will be included, covering details on
setting up a brewery lab, brewery quality control programs, and general
lab techniques to implement these QC programs.
